'Perkedel Jagung' or Sweet Corn Fritters are a popular savoury snack in Indonesia. Try this delicious recipe from the team at Anantara Seminyak in Bali.
To prepare the spice paste, place the ingredients into a mortar and pestle until the paste is smooth.
Cut the corn from the cob and place into bowl. Add remaining ingredients and mix thoroughly. Divide into five equal portions and allow to rest in the refrigerator.
In a medium-sized saucepan, add vegetable oil to halfway up the side of the pan. When the oil reaches 180 celsius, carefully drop each Perkedel in the oil until golden brown.
Place on a paper towel to absorb excess oil then transfer to a serving plate.
