Tibetan Pork Loin Stir Fry

This awesome, super quick stir fry is created with carrot and ginger.


  • 250 gms boneless pork loin, thinly sliced

  • 2 tbsp soy sauce

  • 2 tbsp lard

  • 2 cloves garlic, thinly sliced

  • 1 tbsp ginger, peeled & cut into matchsticks

  • 1 fresh chilli, cut into thin matchsticks

  • 1 carrot, peeled cut into matchsticks

  • ½ red onion, thinly sliced

  • ½ bunch coriander, roughly chopped

  • ½ bunch spring onions, thinly sliced


  • 1.

    In a small bowl, pour soy sauce over pork strips and set aside.

  • 2.

    In a pan over a medium to high heat, add pork fat and fry until fat renders down.

  • 3.

    Pour lard into the pan, add ginger and garlic. Cook for one minute or until fragrant.

  • 4.

    Add carrot, onion and chilli. Season with salt and pepper. Add pork. Stir fry for 1 - 2 minutes.

  • 5.

    Stir through coriander and spring onions and serve.
