This awesome, super quick stir fry is created with carrot and ginger.
In a small bowl, pour soy sauce over pork strips and set aside.
In a pan over a medium to high heat, add pork fat and fry until fat renders down.
Pour lard into the pan, add ginger and garlic. Cook for one minute or until fragrant.
Add carrot, onion and chilli. Season with salt and pepper. Add pork. Stir fry for 1 - 2 minutes.
Stir through coriander and spring onions and serve.
