This super quick recipe is packed full of flavours of ginger, garlic, chilli and cognac. 


  • 250g beef sirloin steak, thinly sliced

  • 1 small head broccoli, cut in to florets

  • 2 tbs olive oil

  • 1/4 red onion

  • 1/2 tsp sesame oil

  • 1 knob ginger, peeled & thinly sliced

  • 2 cloves garlic, peeled & thinly sliced

  • 1 tbs fermented black beans, soaked for 5 minutes in warm water & drained

  • 1 long red chilli, deseeded & finely chopped

  • 1 tbs Shaoxing rice wine or dry sherry

  • 1 tbs cognac

  • 2 - 3 tbs light soy, to taste

  • 2 tbs cornflour mixed with a little cold water

  • ground white pepper

  • salt


  • 1.

    In a frying pan or wok, heat oil over a medium heat.

  • 2.

    Add ginger, garlic, chilli and red onion. Cook for a minute or so until fragrant.

  • 3.

    Add broccoli and cook for a further 2 minutes or until the florets start to soften slightly.

  • 4.

    Add black beans and sliced beef. Turn up heat, season with salt and sear meat for a minute or until nicely browned.

  • 5.

    Add sesame oil, white pepper, rice wine, soy and cognac. Stir well.

  • 6.

    Add the cornflour mixture & simmer for about a minute or until the sauce begins to thicken.

  • 7.

    Serve with steamed rice.
