Chicken Biryani

This super tasty Indian recipe is perfect for a mid week, hassle free dinner.

Ingredients

  • 1 McCormick Zesty Chicken Curry Flavour Shot

  • 750g chicken thigh fillets (skinless and boneless), trimmed and cut into 3 cm pieces

  • 2 brown onions, finely chopped

  • 1 cup basmati rice

  • 2 cups (500ml) chicken stock

  • 1 cup thick Greek Style yoghurt

  • ½ cup mint leaves, finely chopped

Method

  • 1.

    Preheat oven 180ºC.

  • 2.

    Mix flavour shot contents and chicken together in a bowl and marinate for 20 minutes.

  • 3.

    Heat oil in a large non-stick frying pan and sauté chicken and onions until browned. Transfer chicken and onions to an 8 cup (2L) capacity ovenproof dish. Add rice and stock. Stir and cover with a lid. Bake in preheated oven for  1 hour or until rice is cooked.

  • 4.

    Mix yoghurt and mint together and spoon mixture in centre of Biryani and serve with extra mint leaves and pappadums.
