Enzo’s amaretti biscotti
Italian Biscuits


  • 340 g almond meal

  • 1 cup caster sugar

  • 100g cup plain flour

  • 3 egg whites, beaten until frothy

  • 1 teaspoon vanilla extract


  • 1.

    Preheat oven to 170°C.

  • 2.

    In a large bowl, mix all the ingredients until well combined

  • 3.

    Using a tablespoon and shape into small balls using the palm of your hands and then place on baking trays lined with baking paper.

  • 4.

    Make sure to flatten the balls slightly using your fingers.

  • 5.

    Bake until golden. brown for approximately 15 to 20 minutes.

  • 6.

    Place on a wire rack to cool and serve
