  • 1 lebanese cucumber, diced

  • 1 cup quinoa, cooked

  • 2 cup watermelon cubes

  • 160g broken fetta pieces

  • 2 cups heirloom cherry tomatoes

  • 2 tbsp roughly chopped mint

  • 2 tbsp dehydrated Kalamata olives

  • 1 tbsp finely sliced jalapenos

  • 250ml balsamic dressing

    Mix all ingredients together thoroughly in a bowl and serve straight away.
