Ingredients

  • Beetroot and poppyseed goats cheese

  • 200g soft fresh goats cheese

  • 1 large beetroot, peeled

  • 2 tbsp poppyseeds

  • Walnut, honey and thyme goats cheese

  • 200g soft fresh goats cheese, room temperature

  • 3 tbsp honey

  • ¼ cup walnuts, chopped

  • Leaves from 2 sprigs fresh thyme

Method

  • Beetroot and poppyseed goats cheese:

  • 1.

    Shape cheese into desired shape using a small ramekin.

  • 2.

    Use a cold press or juicer to juice beetroot, then transfer juice into a small, shallow bowl.

  • 3.

    Place cheese in the beetroot juice, which should come at least half way up the side of the cheese. Let side 5 minutes, then turn cheese upside down and let sit another 5 minutes. Repeat for a stronger colour if liked.

  • 4.

    Pour poppyseeds into a shallow saucer and roll slightly wet cheese into the seeds to coat completely. Transfer to a wire rack to set at least 5 minutes. Serve immediately with crackers.

  • Walnut, honey and thyme goats cheese:

  • 1.

    Shape cheese into desired shape using a small ramekin.

  • 2.

    Warm honey in a small saucepan over a low heat, then pour into a small shallow bowl.

  • 3.

    Combine walnuts and thyme in a small shallow bowl. Dip cheese in honey to coat completely, then transfer immediately to walnut mixture, rolling to coat all sides.

  • 4.

    Transfer cheese to a wire rack to set a little. It may drip, but reserve a little walnut mixture to sprinkle over the top before serving, if needed. As the honey cools it will firm up.

  • 1.

    Start with cheese at room temperature to ensure it doesn’t release moisture later on. Allow it to reach room temperature, then pat dry with a paper towel if needed, before proceeding with these recipes.
