Pan-fry the bread until golden, then scatter fresh strawberries over the top - what a perfect way to start the day.


  • 2 slice(s) high fibre white bread, (70g) crusts removed

  • 3 tsp berry jam, (we used strawberry)

  • 1 medium egg(s)

  • 2 tbs skim milk

  • 1 tsp caster sugar

  • 1/4 tsp vanilla bean extract

  • 5 individual fresh strawberries, hulled, quartered

  • 1 tsp icing sugar

  • 1 x 3 second spray(s) oil spray


  • 1.

    Lightly spray a small non-stick frying pan with oil and heat over medium heat.

  • 2.

    Spread one slice of the bread with jam. Sandwich with remaining slice of bread. Whisk the egg, milk, sugar and vanilla in a small bowl until combined. Dip each side of the sandwich in the egg mixture until it soaks in.

  • 3.

    Cook sandwich in preheated pan for 2–3 minutes each side or until golden. Top with strawberries and serve lightly dusted with icing sugar.
