Berry Clafoutis

Put a smile on Mum's face this Mother's Day by surprising her with this delicious dessert. 


  • 1 tablespoon caster sugar

  • 2 punnets raspberries or blueberries

  • 125g block Philadelphia Light Cream Cheese, softened

  • 3/4 cup caster sugar, extra

  • 1/4 cup flour, sifted

  • 1 teaspoon vanilla

  • 3 eggs

  • 1/2 cup milk

  • Icing sugar, for dusting


  • 1.

    Sprinkle sugar over the base of 4×1 cup capacity greased shallow ovenproof dishes. Divide berries evenly between the dishes.

  • 2.

    Beat the Philly, extra sugar and flour with an electric beater until smooth. Gradually add the combined vanilla, eggs and milk, beat until smooth. Pour mixture evenly over berries.

  • 3.

    Bake in a hot oven 200°C for 20 minutes or until golden and cooked. Dust with icing sugar and serve warm.
