This delicious duck recipe is served with a homemade apple sauce.
Cut the duck breasts length ways into 3mm wide strips, flatten each piece out with a mallet.
Lay the strips of duck two by two on top of each other, alternating layers of fat & lean.
Cut the bacon into strips 3mm wide & lay them on top of the duck.
Season with salt and pepper.
Lay basil leaves on top of the bacon.
Roll up the strips tightly to make tournedos & push through a tooth pick to secure.
Brown gently over a medium heat in a pan with a little olive oil for 2 -3 minutes each side.
Transfer to a preheated oven at 180C for 12 – 15 minutes or until golden and brown.
Set aside to rest.
For the sauce, drain most of the oil from the pan. Melt butter and add onion, apple, red wine vinegar and maple syrup. Stir in chervil and chives.
Serve tournedos with buttery mash and plenty of sauce.
