Red Empress- Trinidad Scorpion Hot Marinated Fresh Olives


  • 150g Kalamata olives

  • 150g green olives

  • 1/2 lemon & half lemon zest

  • 4 Trinidad Scorpion chillies

  • Few tblspn of red & white wine vinegar

  • 4 cloves garlic

  • Tblspn fresh oregano

  • 3 bay leaves

  • Few sprigs of fresh rosemary

  • 3/4 cup good quality extra virgin olive oil


  • 1.

    Drain and dry olives

  • 2.

    Dice & combine all ingredients in a glass bowl (olives remain pitted & whole)

  • 3.

    Heat oil in heavy set sauce pan 'til it's hot

  • 4.

    Pour hot oil over ingredients in glass bowl

  • 5.

    Divide into sterile glass jars

  • 6.

    Chill & enjoy!
