Red Empress- Trinidad Scorpion Hot Chilli Sauce & Marinade
Dice and cook garlic, onion, chillies with a smidge of olive oil in a heavy set saucepan on medium heat for 5 minutes
Add tomatoes, salt, sugar, vinegar & lemon for a further 20 minutes
Allow to cool and puree
Pour into sterilized glass jars
Chill & enjoy!
Gorgeous to marinate meats, seafood, veg & fresh olives.
