Red Empress- Trinidad Scorpion Hot Chilli Sauce & Marinade


  • 4 Trinidad Scorpion Chiilies

  • 4 cloves garlic

  • 1 white onion

  • 7 tblspn white wine vinegar

  • 3/4 lemon

  • 400g homemade pureed tomatoes

  • Salt & sugar to balance/taste


  • 1.

    Dice and cook garlic, onion, chillies with a smidge of olive oil in a heavy set saucepan on medium heat for 5 minutes

  • 2.

    Add tomatoes, salt, sugar, vinegar & lemon for a further 20 minutes

  • 3.

    Allow to cool and puree

  • 4.

    Pour into sterilized glass jars

  • 5.

    Chill & enjoy!
