With the weather still on the warm side make the most of salads before we switch to soups. One of Eat Fit Food’s most popular is not only delicious but packed with goodness and superfoods like kale and pepitas.
Lose weight – HEAD FOR SALADS…
Salads are ideal if you are trying to lose weight. With their high fibre and water content you are able to fill up quickly on a whole lot of goodness. As most of the ingredients are eaten raw, heat-sensitive vitamins such as vitamin C, vitamin B1 and Folate are not affected; thus maximising the nutritional value of the ingredients.
Salads help you get those recommended 5 serves of vegetables and 2 serves of fruit each day.
WALNUTS are rich in antioxidants, high in protein and assist in lowering cholesterol. They contain a range of vitamins and minerals including vitamin C, B1, B2, B3, B5, B6, iron, copper, magnesium, potassium, zinc and folic acid. Walnuts may also be beneficial to the kidneys, liver, brain, skin and digestive system.
BEETROOT is a delicious root vegetable that will support our body’s detoxification process. Beetroot is also high in iron which will boost your energy levels and help fight fatigue.

Put mixed leaves at base of container, add shredded washed kale.
Then arrange beetroot, add half cannellini beans, add roasted pumpkin.
Then arrange roasted Spanish onion, cherry tomatoes and then the rest of the cannellini beans.
Add orange segments.
Garnish top with mungbeans, pepitas and walnuts.
Put dressing to one corner.
Arrange as you wish on your plate and ENJOY!
