Open Prawn Sandwich with Green Goddess Dressing

The superb seafood sandwich is simple, fresh and delicious. 

Ingredients

  • 4 slices sourdough bread, toasted

  • 2 ripe avocadoes, pitted, peeled, halved, sliced

  • Handful picked watercress

  • 1 large fennel bulb, finely sliced

  • 8 large peeled cooked prawns, sliced in half

  • parsley leaves, to serve

  • Green goddess dressing

  • a large handful of mixed herbs (such as coriander, mint, parsley)

  • A large handful of watercress leaves

  • 2 tablespoons mayonnaise

  • 2 tablespoons plain yoghurt

  • 2 spring onions, chopped

  • juice of ½ lemon

Method

  • 1.

    For the green goddess dressing, pulse together all the ingredients in a blender or food processor, adding a little more yoghurt if needed. Cover and chill until required.

  • 2.

    Spread some dressing over the toast.  Arrange the avocado, watercress, fennel and prawns on top. Season with salt and pepper and top with parsley leaves and extra dressing, if you like.
