This beautiful pear recipe is not only simple and healthy, it's tasty, satisfying and so quick to whip up!


  • 4 slices sour dough bread

  • 1 ripe avocado

  • 1 ripe Packham pear, quartered,cored and sliced

  • ½ cup baby rocket leaves

  • 50g shaved parmesan

  • lemon wedges to serve


  • 1.

    Lightly toast the sour dough bread if desired.

  • 2.

    Roughly mash ¼ of the avocado onto each slice and season with a pinch of salt.

  • 3.

    Top with slices of pear, rocket leaves and shaved parmesan.

  • 4.

    Grind over black pepper and serve with lemon wedges.
