Brisket

Ingredients

  • 1.5kg piece of brisket

  • 1 tbls ground coffee

  • 2 tbls  honey

  • 2 tbls smoked paprika

  • 1 tsp garlic powder

  • 1 tsp ground roasted cumin seeds

  • 1 tsp ground roasted coriander seeds

  • 1 tbls salt

  • 1 pinch chili powder

  • 100g pickled gherkins

  • 100g Dijon mustard

Method

  • 1.

    Mix all the ingredients together.

  • 2.

    Coat the brisket.

  • 3.

    Wrap the meat in paper and foil very tightly.

  • 4.

    Cook over a gentle heat for 4 - 5 hours.  Serve with pickles and mustard
