Break the chocolate into small pieces, and placed them inside a dry bowl.
Bring the cream to boil in a saucepan then pour over the chocolate and stir constantly with a wooden spoon until the chocolate is completely melted. Add in the butter and mix again.
Separate the egg whites and place into a clean bowl. Beat until stiff with the sugar, using the TurboPro whisks on high speed. Add in the egg yolks, then beat again on high speed for a few seconds.
Take a third of the egg mixture and blend into the chocolate mixture. Then blend the chocolate mixture back into the remaining egg mix and delicately fold until even, using a plastic spatula. Pour the mix into a serving bowl and chill for at least 4 hours before serving.
