Try your hand at this delicious pavlova recipe!
In a mixing bowl, combine the sugar and the cornflour.
In a separate bowl, beat the egg whites until stiff using the Whisks on your TurboPro, gradually adding in the lemon juice and salt in small drops. Gradually add the white sugar, until you obtain a very shiny meringue mixture.
Fit a 1cm nozzle to a piping bag.
Line a baking tray with baking paper and pipe a 20 cm diameter circle of meringue. Fill in the circle, then pipe once or twice more around the edges to create a crown. Bake for 90 minutes at 110C. Turn off the oven, open the door and leave to cool.
Slit the vanilla bean lengthways and take out the seeds with the tip of a knife. Mix them with the icing sugar. Using the TurboPro whisks, whip the cream, sugar and vanilla, until thick.
When the meringue is cold, fill the centre with half of the whipped cream, add half of the fruit; cover with more whipped cream and finish with the fruit. Serve immediately.
Tip. For a fresh taste, sprinkle the meringue with 2 tablespoons of grated coconut before putting it in the oven.
