Charcoal Kitchen


  • Pears (peeled and cut into quarters)

  • Sugar syrup

  • 2 cinnamon stick

  • 6 cloves

  • 2 star anise

  • 400ml red wine

  • 400ml orange juice

  • 250g caster sugar

  • 100g blue cheese


  • 1.

    Place all the sugar syrup ingredients into a sauce pan add the pears and cook for 15 – 20 minutes, depending on the ripeness of the pears

  • 2.

    Remove the pears and char on the BBQ for 1 – 2 minutes to caramelize.  Reduce a little of the poaching liquid to a syrup.  Serve pears with cheese, maybe a few crackers and nuts too.
