Charcoal Kitchen


  • 1 shoulder of  pork

  • For the marinade:

  • 50ml honey

  • 50ml soy

  • 30ml fish sauce

  • 2 garlic cloves (grated)

  • 1 tbl spoon chili powder

  • 1 tbl spoon roasted coriander seeds

  • 50ml grape seed oil


  • 1.

    500ml water

  • 2.

    Season the pork with the salt and color on the BBQ for 5 minutes each side then place in a large baking tray. 

  • 3.

    Mix all the ingredients together to form a marinade.

  • 4.

    Massage into the shoulder.

  • 5.

    Add the water to the tray, cover in foil and cook on the BBQ (Lid down) or in a slow oven for 4-5 hours.

Don't know wether to get the skin scored or remove same completely...HELP! looks yummy anyway you look at it but I do love a bit of crackle though..

What do you mean by color on the BBQ when you haven't rubbed the marinade yet? Sorry I'm a little confused on that method.

It means to "brown"
This is done before putting the marinade on the meat.
It is not cooking the meat you are only really sealing the meat for cooking.. its a way to add colour and give the meat a nicer flavour.
So to do this you would have your bbq or pan on a high heat and then just brown on all sides so that you can see that the whole thing has been nicely caramelised.
Then just continue to follow the directions as they are.
