Try this delicious toasted brioche!


  • 1 cup water

  • 3 oranges, juiced

  • 1 cinnamon stick

  • 2 cloves

  • 2 ½ tbs. agave syrup (or honey or any sugar of your liking)

  • 450g dried fruits (such as pears, apricots, prunes, apples)

  • 8 thick slices of brioche bread, toasted until golden brown.

  • 1 ½ cups ricotta

  • ¼ cup cream cheese

  • 1 tsp. agave or honey

  • Pinch cinnamon


  • 1.

    In a saucepan, combine water, juice, cinnamon stick, cloves, agave and fruits. Bring to the boil and turn down to a low heat and cook for 25 minutes.

  • 2.

    Cool slightly. While the poached fruits are cooling, blend the ricotta, cream cheese, agave and cinnamon in a small food processor until smooth.

  • 3.

    To serve, arrange two pieces of brioche on each plate. Spoon-over the poached fruits and the syrup, followed by a spoonful of the ricotta mixture.
