Hummus is the perfect standby sandwich spread for those mornings when there is no time to be creative! With a little more time, add the veggies too, in grated form.


  • 2 slices Wonder White bread

  • 1-2 tbsp. home-made hummus (see recipe below)

  • ¼ Lebanese cucumber, grated

  • ¼ carrot, peeled and grated

  • ¼ celery stick, peeled and grated

  • Home-made Hummus

  • 1 x 400g tin chickpeas

  • 1 small clove garlic, crushed

  • 1-2 tbsp. lemon juice

  • 1 tbsp. olive oil

  • 2tsp. dried mint


  • 1.

    Spread the home-made hummus liberally on each slice of Wonder White bread.

    Sprinkle the grated cucumber, carrot and celery on top of the hummus on one

    Piece of bread

  • 4.

    Place the second piece of Wonder White bread with hummus on top and slice into

  • 5.


  • Home-made Hummus:

  • 1.

    Drain the chickpeas, reserving the liquid.

  • 2.

    Combine the chickpeas, garlic, 1 tbsp. lemon juice, olive oil, mint and cumin in the bowl of a small food processor. Add 2 tbsp. of the reserved chickpea liquid and blend until smooth. Adjust with extra lemon juice if necessary to balance the flavours. Add another tablespoon of chickpea liquid if needed to form good spreading consistency.

    Transfer to an airtight container and store in the refrigerator until needed as an easy sandwich spread.
