Guacamole is delicious and perfect as a sandwich spread that is both delicious and healthy. Add a few other burrito-style ingredients for another lunchbox winner.


  • 2 pieces of Wonder White bread

  • 2 tbsp. guacamole (see recipe below)

  • 30g lean chicken*

  • 1 tbsp. grated low-fat cheese

  • ¼ carrot, peeled and grated

  • ½ leaf iceberg lettuce, shredded

  • Guacamole

  • 2 medium avocados

  • ½ lime, juiced

  • ½ small red onion, as finely diced as you can

  • 1 medium tomato, finely diced & excess juice drained

  • 1 small handful of coriander leaves, roughly chopped


  • 1.

    Spread each piece of Wonder White bread with the guacamole

  • 2.

    Place the chicken, cheese, carrot and lettuce on top of one of the pieces of bread

  • 3.

    Close with the second piece of bread and cut into triangles.

  • Guacamole:

  • 1.

    Cut each avocado in half, around the seed. Scoop the flesh from the skin and discard the seed. Mash with a fork until it is smooth enough to spread.

  • 2.

    Add the lime juice to taste.

  • 3.

    Stir through the finely chopped onion, tomato and coriander leaves.

  • 4.

    Transfer to an airtight container and refrigerate until needed as a spread between 2 slices of Wonder White bread.
