Samurai Sliced Beef Fillet in Fighting Sauce with Ninja Power Energy Salad

Ingredients

  • Samurai Sliced Beef Fillet

  • 1 eye fillet allowing 120-200g per person (800g whole eye fillet)

  • 1 cup raw sugar

  • 4 tablespoons of olive oil

  • Meat dressing/ fighting sauce

  • ½ cup olive oil

  • 2 cloves of garlic crushed

  • 2 tablespoons of dried chili

  • ¼ cup soy sauce

  • Ninja Power Energy Salad

  • 2 cups broccoli florets

  • 20 green beans, cut into 3cm lengths

  • 2 cups baby spinach

  • ½ cup bean sprouts

  • Orange

  • Seeded mustard

  • Flaxseed oil

  • 2 cups mixed mint and coriander

  • 4 tablespoons pepitas to garnish

  • 4 teaspoons sunflower seeds to garnish

Method

  • Samurai Sliced Beef Fillet:

  • 1.

    Roll the beef fillet in a little oil and raw sugar

  • 2.

    Heat the grill until very hot

  • 3.

    Sear beef for 25 minutes, continually turning so it doesn’t catch

  • 4.

    Wrap beef in five layers of tin foil sealing each end

  • 5.

    Leave at room temperature for 2 hours

  • Meat dressing/ fighting sauce:

  • 1.

    Bring oil to the boil

  • 2.

    Remove from heat and add ingredients (stand back as it splashes)

  • Ninja Power Energy Salad:

  • 1.

    Blanch the broccoli and beans in boiling water for two minutes, then drain and refresh in ice cold water.

  • 2.

    Arrange the broccoli, beans, baby spinach, bean sprouts, mixed herbs and orange segments in bowl.

  • 3.

    Combine the seeded mustard and juice of an orange and flaxseed oil in a screwtop jar and shake well. Pour the dressing over the salad.

  • 4.

    Garnish with pepitas and sunflower seeds.
