Try Mark's delicious tacos!
Cover pork with combo of ¼ cup sugar and ¼ cup salt by hand.
Cover, refrigerate and cure pork overnight.
Next day (approximately 1pm) – brush off excess salt and sugar.
Put the pork in a conventional oven on 120 degrees and baste every hour for six hours.
Remove from oven, cover with foil and rest for 1 hour.
Chop up chillies in Cuisinart
Add onion, chop again and scrape down,
Add tomatoes, cilantro, lemon juice, salt and pulse again until it is the consistency you want, longer for juicier, shorter for chunkier.
Taco salad on table (for tacos):
Finely slice cabbage, clean and dice cilantro.
Arrange all ingredients decoratively on a platter.
Heat 16 tortillas
Pull the pork
Ready to serve
