Camarones a La Parrilla Served with Salsa

Ingredients

  • Camarones a la Parrilla 

  • 3 butterfly prawns per person

  • 1 clove garlic

  • ¼ stick  butter

  • Mango Salsa

  • 1 sweet red capsicum, diced finely

  • 2 ripe mangoes, diced finely

  • Rind (finely grated – no white) of one lime

  • ½ red onion diced

  • Pesto

  • Coriander

  • Hand full walnuts

  • 4 tablespoons olive oil

  • Dash salt

Method

  • Camarones a la Parrilla:

  • 1.

    Shell, gut and butterfly prawns.

  • 2.

    Crush garlic, melt butter and combine.

  • 3.

    Baste prawns with butter and BBQ.

  • Mango Salsa:

  • 1.

    Combine all ingredients.

  • Pesto:

  • 1.

    Mix /blend
