Marinated Asian Beef with Ponzu Dipping Sauce and Delicious Roasted Rosemary Potatoes

Ingredients

  • 600-800g beef fillet (one piece)

  • Marinade

  • 3 x garlic cloves finely chopped

  • 3cm piece of ginger

  • 3 x tbsp. of shao hsing wine

  • 2 x tbsp. of tamari

  • 2 x tbsp. of brown sugar

  • 1 x tsp. sesame oil

  • Dressing

  • 5cm of fresh ginger finely chopped

  • 1 x garlic clove finely chopped

  • 1 x bunch of coriander stems (wash thoroughly and finely dice the stems)

  • 100ml Ponzu sauce

  • 1 x tbsp. tamari

  • 1 x tbsp. brown sugar

  • 1 x spring onion finely sliced

  • Sliced fried shallots

  • Delicious Roasted Rosemary Potatoes

  • 6 x large white potatoes

  • 60g butter

  • Garlic salt (sprinkle)

  • Sea salt and pepper

  • A few sprigs of rosemary

  • A few sprigs of Thyme

  • Olive oil

  • Pumpkin and Asparagus Salad

  • 1 ½ x butternut or jap pumpkin – cut into 3cm cubes

  • ¼ x cup of good olive oil

  • 2 x bunches of asparagus

  • 6 x slices of prosciutto grilled until crisp

  • ½ x cup of grana padano parmesan cheese, thinly sliced

  • ½ x avocado thinly sliced (with a little lemon juice on top to stop it going brown)

  • Garlic Salt

  • Dressing

  • ½ x cup of light olive oil

  • 2 x tbsp. of red wine vinegar

  • 2 x tsp. of seeded mustard

  • 1 x tsp. sea salt

  • 2 x tsp. honey

  • 1 x tsp. tomato sauce

  • Cracked pepper

Method

  • 1.

    Pre-heat oven to 180 degrees

  • 2.

    Combine all marinade ingredients in a bowl and mix well

  • 3.

    Add beef, in a large snap lock bag, seal and leave to marinate for at least an hour

  • 4.

    Remove beef from fridge at least 30 minutes prior to cooking

  • 5.

    Sear on a hot char grill for 3 minutes on each side to get a nice colour

  • 6.

    Transfer beef to a roasting tray and roast for approx. 14 minutes for medium rare

  • 7.

    Remove from oven, cover with foil and rest for 10-15 mins

  • 8.

    Slice rested beef on a large white platter

  • 9.

    Scatter marinade over the top

  • 10.

    Put the left over marinade in a small bowl, serve with some fried shallots

  • Delicious Roasted Rosemary Potatoes:

  • 1.

    Preheat oven to 180 degrees

  • 2.

    Wash the potatoes, keep skins on and cut into chunks (they don’t have to be perfect)

  • 3.

    Place potatoes in a baking tray with baking paper underneath

  • 4.

    Douse in olive oil, throw on herbs and sprinkle some garlic salt on top

  • 5.

    Mix well and make sure all the chunks are evenly coated

  • 6.

    Make sure they are evenly spaced on the tray and place thinly cut bits of butter on top of potatoes

  • 7.

    Place in the oven and after 20 minutes give a good stir and mix melted butter around well

  • 8.

    At 40 minutes, if they are not golden brown and crispy, give them a blast under the griller

  • 9.

    Once cooked, take out and give crispy potatoes a good sprinkling of sea salt and some cracked pepper

  • 10.

    Serve straight away

  • Pumpkin and Asparagus Salad:

  • 1.

    Preheat oven to 200 degrees

  • 2.

    Place pumpkin cubes on a tray with baking paper underneath

  • 3.

    Douse it in olive oil, garlic salt and pepper

  • 4.

    Cook for 30-40 minutes until cooked through and a little crispy – put aside

  • 5.

    Trim asparagus stalks, boil water with sea salt in a shallow fry pan on medium heat for 3-5 minutes till asparagus just cooked

  • 6.

    Drain immediately and place in ice water to stop the cooking process and put aside

  • 7.

    Place prosciutto on baking paper under the griller and grill until crisp

  • 8.

    Set aside and once cooled break prosciutto into bits

  • 9.

    In a salad bowl, place washed rocket, cooled pumpkin pieces, asparagus, avocado, prosciutto and dress with all the dressing. Do this gently so you don’t break up the pumpkin or asparagus

  • 10.

    Finish with parmesan cheese and cracked pepper
