Try Sophie's beautiful entree!


  • 1 x sheet puff pastry

  • ½ x tub (drained) of Meredith Goats Cheese in oil

  • 6-8 x slices of good quality prosciutto

  • A few tbsp. of good quality caramelized onions

  • 1 x egg yolk for brushing the tart

  • 8-10 x figs

  • 2 x handfuls of washed rocket

  • Good quality fruity olive oil

  • Fig vino cotto

  • Sea salt and pepper


  • 1.

    Line a tray with baking paper

  • 2.

    Place square of puff pastry on top and cut into 4 even squares

  • 3.

    Separate, prick with a for fork, when it is slightly thawed

  • 4.

    Whisk up an egg yolk and lightly brush squares with the egg wash (especially corners)

  • 5.

    Thinly slice figs, and place neatly on top of the tarts (I usually do 2 rows of figs per square), season, then bake in a pre-heated oven at 180 degrees for 15-20 minutes till it’s golden brown

  • 6.

    Take out, chop up goats cheese roughly with a knife and spread evenly on each tart

  • 7.

    Top with caramelized onions in a thin layer

  • 8.

    Roughly break up prosciutto and make sure each tart has enough

  • 9.

    Place rocket on top, and drizzle with vino cotto and a little bitof good olive oil on each

  • 10.

    Season with sea salt and pepper and enjoy!
