Line a tray with baking paper
Place square of puff pastry on top and cut into 4 even squares
Separate, prick with a for fork, when it is slightly thawed
Whisk up an egg yolk and lightly brush squares with the egg wash (especially corners)
Thinly slice figs, and place neatly on top of the tarts (I usually do 2 rows of figs per square), season, then bake in a pre-heated oven at 180 degrees for 15-20 minutes till it’s golden brown
Take out, chop up goats cheese roughly with a knife and spread evenly on each tart
Top with caramelized onions in a thin layer
Roughly break up prosciutto and make sure each tart has enough
Place rocket on top, and drizzle with vino cotto and a little bitof good olive oil on each
Season with sea salt and pepper and enjoy!
