Try Maria's melon dessert!


  • 2 x rockmelons

  • 1 x punnet blackberries

  • 1 x large punnet of medium sized strawberries

  • 1 x punnet of rasberries

  • 2 x passionfruits

  • Splash of Grand Marnier or your favourite liqueur

  • 4 x egg whites

  • 250g caster sugar

  • Pinch of crème of tartar

  • Grated lime zest


  • 1.

    Preheat oven to 120 degrees

  • 2.

    Cut melons in half

  • 3.

    Slice end off – to be able to stand flat on plate

  • 4.

    Remove seeds

  • 5.

    Scoop flesh out of melons and add to the fruits

  • 6.

    Sprinkle liqueur over fruit and let stand in the fridge

  • 7.

    Whisk egg whites until stiff peaks form

  • 8.

    Gradually add the sugar

  • 9.

    Add crème of tartar

  • 10.

    Add lime zest

  • 11.

    Cover oven tray with baking paper

  • 12.

    Spoon on meringue mixture in circles

  • 13.

    Put in oven

  • 14.

    Lower heat to 90 degrees

  • 15.

    Will take 1 hour but check after 40 mins

  • 16.

    Allow to cool for 1 hour

  • 17.

    When ready to serve, place meringue on top of melon

  • 18.

    Place a raspberry on top of each meringue

  • 19.

    Slightly heat liqueur in a small copper pot, ignite and carefully splash a little on top of each one

  • 20.

    OR you can have ‘Maria’s Sparkling Melon’s’ – serve with a sparkler placed on the side of the melon
