Mama’s Sicilian Fettucine

Try Maria's delicious pasta main!

Ingredients

  • A few good splashes of extra virgin olive oil

  • 2 x Spanish onions

  • 2 x garlic cloves

  • 4 x cans Italian crushed tomatoes

  • 3 x anchovy fillets

  • 1 x generous cup of white wine

  • 1 x cup black stoned olives

  • 4 x dried stalks of oregano

  • 8 x slices Sicilian Sopressa salami

  • Fettucine

  • 1 x pack of Fettucine – dry preferably as this keeps the sauce on top of the pasta

  • 80g x shredded parmesan

Method

  • 1.

    Heat the oil in a large saucepan

  • 2.

    Add coarsely chopped onions

  • 3.

    Add crushed garlic

  • 4.

    Sauté over moderate heat for 5 minutes

  • 5.

    Rub the stalks of oregano between palms over the saucepan and sauté for a further 2 minutes

  • 6.

    Add crushed tomatoes

  • 7.

    Bring to boiling point over a high heat

  • 8.

    Simmer for 10 minutes

  • 9.

    Add the anchovies, olives, wine and salami

  • 10.

    Leave on stove to simmer for another 45 minutes (or till required)

  • Fettucine:

  • 1.

    Boil water in a large saucepan

  • 2.

    Add pasta

  • 3.

    Cook till al dente (to the taste) – about 15-20 minutes

  • 4.

    Drain pasta

  • 5.

    Put back into the saucepan

  • 6.

    Save some sauce for the top of the pasta when serving

  • 7.

    Add the remainder of the sauce to the saucepan and mix through

  • 8.

    Sprinkle with shredded parmesan
