Green with Envy Apple Pie and Rainbow Jelly Shots

Ingredients

  • Ingredients

  • 2 x cups plain flour

  • 2 ½ x cups caster sugar

  • 1 x tsp. baking powder

  • A pinch of salt

  • 200g of unsalted butter

  • 1 x large egg

  • Cold water

  • Filling

  • 4-5 Lrg green apples, peeled, cored and cut into ¼ pieces

  • ¼ x cup sugar

  • 1 tsp. ground cinnamon

  • Enough apricot jam to cover the pastry base

  • 30g butter

  • Egg white and sugar to baste

  • Choice of double or thickened cream to serve, preferably cold

  • Jelly Shots

  • Packet of jelly

  • 400ml of good vodka

Method

  • 1.

    Add flour, baking powder, salt and caster sugar into bowl…get your hands in there!

  • 2.

    Slowly mix in cubed butter until it is a dry consistency

  • 3.

    Add egg and a bit of cold water

  • 4.

    Combine it all together to make your dough

  • 5.

    Place dough into cling wrap and flatten into a ball

  • 6.

    Refrigerate for 40 minutes

  • 7.

    Pre-heat oven to 190 degrees

  • 8.

    Place apples into a clean bowl with lemon juice and cinnamon, stir til apples covered

  • 9.

    Melt butter and cover the pie dish

  • 10.

    Remove dough, roll out and place in pie dish

  • 11.

    Evenly smear jam over the base and place apples in evenly to 2/3 fill the pie dish

  • 12.

    Use egg white and sugar around the edges and roll out the rest of the dough and cover

  • 13.

    Brush remaining butter over the lid and cut vent holes

  • 14.

    Sprinkle 1 ½ tbsp. of sugar over the lid

  • 15.

    Place in pre-heated oven for 20 mins

  • 16.

    Reduce temp to 170 and bake for a further 40 mins or until brown

  • 17.

    Remove and allow to sit for 5 mins before serving hot with cream and ‘it’s hot’ warning

  • Jelly Shots:

  • 1.

    Mix jelly as per instructions on pack

  • 2.

    Add 400ml of good vodka to hot mix

  • 3.

    Pour in to shot glasses

  • 4.

    Repeat for as many colours as you like

  • 5.

    Place straight into fridge to chill for several hours
