For the wontons, heat the oil in a small fry pan. Gently place the wrappers in the oil and cook until golden brown.
Drain on paper towel. (They should slightly curl to form a cup shape)
To prepare the avocado puree, blend all the ingredients together until smooth.
For the tartare, cut the beef into small cubes, then run your knife through this a few times to get it as fine as possible. Add the rest of the ingredients and adjust the seasoning at the end if necessary.
To serve, dollop a teaspoon of the avocado puree onto the crisp wontons followed by a quenelle of the beef.
Garnish with chives and black sesame seeds.
