Pan Fried Atlantic Salmon with Spiced Chickpeas Dill and Sumac

Try this amazing seafood recipe!


  • 4 x 160 portions of Atlantic salmon

  • 200g of cooked chickpeas

  • ½ red onions finely diced

  • 2 cloves garlic,

  • 1 tbs sumac

  • 1 tbs coriander powder

  • 1tbs black pepper powder

  • ½ tbs cayenne pepper

  • ½ bunch chopped dill

  • 4 tbs organic yogurt

  • 150mls good quality olive oil

  • 2 lemons juiced

  • Lemon zest

  • salt pinch


  • For The Spices:

  • 1.

    Toast all the spices in the oven until golden. Mix through the chickpeas add the garlic, red onion, lemon zest and a splash of olive oil.This can be prepared in advance.

  • 2.

    Lightly Pan-fry the Salmon fillets with a pinch of salt rubbed on them, on the skin side for 4 mins until the skin is crispy and the Salmon is just cooked.

  • 3.

    Take the chickpea mix add the yogurt, dill and a squeeze of lemon. Arrange attractively on the plates top this with the crispy skinned Salmon sprinkle over some toasted sumac and drizzle olive oil
