For The Spices:
Toast all the spices in the oven until golden. Mix through the chickpeas add the garlic, red onion, lemon zest and a splash of olive oil.This can be prepared in advance.
Lightly Pan-fry the Salmon fillets with a pinch of salt rubbed on them, on the skin side for 4 mins until the skin is crispy and the Salmon is just cooked.
Take the chickpea mix add the yogurt, dill and a squeeze of lemon. Arrange attractively on the plates top this with the crispy skinned Salmon sprinkle over some toasted sumac and drizzle olive oil
