Rainbow Salad with Leather Skinned Fish

Try this great seafood main!

Ingredients

  • 4 x pieces of salmon

  • 1 x handful of rocket

  • 1 x handful of spinach

  • Punnet of cherry tomatoes

  • 10 x snow peas

  • 1 x medium cucumber

  • 1 x container of crunchy bean mix

  • ½ container of snow pea sprouts

  • ½ container alfalfa sprouts

  • 2 x avocados

  • ½ cup of mixed pine nuts, pepitas, sunflower seeds

  • 1 x ball of Persian feta

  • ¼ cup macadamia nut oil

Method

  • 1.

    Chop, slice, grate, pull apart all salad ingredients

  • 2.

    Chop avocado and Persian fetta

  • 3.

    Lightly stir fry in macadamia nut oil the pine nuts, pepitas, sunflower seeds until light golden brown and put aside

  • 4.

    Shallow fry salmon pieces in macadamia nut oil on a low heat until cooked through

  • 5.

    Turn the heat up and turn salmon so skin crisps

  • 6.

    Place the salad onto platter

  • 7.

    Mix through the avocado and Persian fetta to bind the salad

  • 8.

    Sprinkle pine nuts on top

  • 9.

    Add salmon

  • 10.

    Serve from platter
