Try this amazing vegetarian entree!
Cut the zucchini’s lengthways
Scoop out the flesh of the zucchini
Finely chop the tomato, onion, garlic clove and chilli
Add the chopped ingredients to the flesh of the zucchini
Lightly cook in olive oil
Cook zucchini halves in microwave for 2 mins (or in oven for 10 mins)
Add the cooked ingredients into the zucchini boats and place into a hot oven for 5 mins
Serve with a tbsp. of parmesan cheese and tsp. of pesto
Home Made Hummus:
Blend chickpeas, garlic, chilli and olive oil in a blender until smooth consistency
Serve with large cucumber slices
