Try this delicious pavlova recipe!


  • 2 x egg whites

  • ½ cup castor sugar

  • Slivered almonds

  • Organic yoghurt

  • Agave syrup

  • 2 x vanilla beans

  • Raspberries


  • 1.

    Preheat oven to 120 degrees Celsius

  • 2.

    Line a baking tray with baking paper – mark out 6 rectangle shapes

  • 3.

    Place eggwhites in electric mixing bowl

  • 4.

    Beat until soft peaks form

  • 5.

    Add sugar about 1 tbsp. at a time while mixing, keep beating well until all sugar is added and dissolved

  • 6.

    Mix should be really glossy and thick

  • 7.

    Spoon onto prepared tray and form into shapes

  • 8.

    Bake for about 1 hour until crisp to touch

  • 9.

    Turn off oven, leave door open and let cool

  • 10.

    Lightly toast almonds in pan

  • 11.

    Slit vanilla beans and scrape seeds into yoghurt and mix through with agave syrup to taste

  • 12.

    Spoon yoghurt mix onto meringues top with raspberries and garnish with almonds
