Flambéed Bananas

Try Charlie's delicious dessert!


  • 3 x ripe bananas, cut diagonally in to thirds

  • 1 x cup dark brown sugar

  • ½  x cup water

  • 1 tbsp. salted butter

  • ¼ x cup dark rum

  • 4 x tbsp. brandy

  • 1 x tbsp. vanilla beans

  • Grated nutmeg to taste

  • Good quality vanilla bean ice cream to serve


  • 1.

    Place the brown sugar, water and butter in a frypan

  • 2.

    Bring to a boil while stirring

  • 3.

    Boil over high heat for about 5 minutes

  • 4.

    Add bananas and continue cooking, occasionally spooning syrup over the bananas until the syrup starts to caramelize

  • 5.

    Add the rum and brandy, light flambé

  • 6.

    Add the vanilla and nutmeg to taste

  • 7.

    Serve with good quality vanilla bean ice cream
