Grab the blow torch and whip up this super simple dessert at your next BBQ.
Cook the almonds in a pan until golden brown, add sugar and caramelize.
Whisk the white in a large bowl and gradually add the caster sugar until firm and silky smooth.
Spread a little on a plate and grill with a blowtorch.
Place the raspberries in a sieve and hold over some smoldering raspberry leaves.
Place onto the plate.
Serve with a passion fruit, cream, the nuts and a little salt. Garnish with charred mint leaves or raspberry leaves… That’s of course if you happen to have a raspberry bush growing in your back yard!
