Saffron and Coriander Stuffing

Saffron and Coriander stuffing is used in Neil's Slow Roasted Chicken "Burgundian Style" and is an essential part of creating this dish's wonderful rich flavour.


  • 4 Cloves Garlic peeled and poached in chicken stock until soft

  • sea salt

  • freshly ground white pepper

  • 0.5 cup coriander leaf roughly chopped

  • 0.5 cup Parsley Leaf roughly chopped

  • 0.5 teaspoon Cumin Powder

  • 30 Tips Saffron in 2 tablespoons hot water

  • 0.5 cup fresh Sourdough Breadcrumbs


  • 1.

    In a mortar & pestle, pound the poached garlic with salt & pepper then add the chopped coriander and parsley, cumin and saffron.

  • 2.

    Add the breadcrumbs and mix through well.

  • 3.

    Refrigerate until needed.
