Baby Fennel, Beets, Halumi and Bitter Greens Salad

Everyone will love this halumi salad at your next BBQ, especially the vegetarians!

  • 6 Baby fennel (washed)

  • 6 baby beetroots (washed)

  • 100g Halumi cheese

  • 1 Juice of half an orange

  • 2 tbl spoon olive oil

  • A bowl full of mixed herbs…Fennel fronds, beet leaves, nasturtiums, elk, dandelion rocket…any thing that takes your fancy.


  • 1.

    BBQ the fennel, beets and cheese until nicely charred.

  • 2.

    Pop into a bowl, season with orange juice, salt, pepper and oil. 

  • 3.

    Mix in the leaves, then dig in.
