Try this delightful Christmas Pork recipe
Place the 4 pieces of pork through a skewer, slowly cook on BBQ for 50 minutes turning often.
Bake whole sweet potato in jacket for half an hour or until soft.
Peel and dice apple and add to saucepan with remaining ingredients. Bring to simmer until apple is just cooked.
Spinach Cream - Sauté onions with garlic and nutmeg.
Add cream to reduce then add spinach stirring until soft, then puree until sauce consistency.
Peel sweet potato, crush onto plate and lay pork on top.
Pour cranberry and apple sauce over the pork and garnish with spinach cream and serve.
