Mum’s Famous Jam Sponge Trifle with Thickened Cream

Enjoy Steve's jam sponge this Christmas!


  • 1 x Sponge jam roll

  • Strawberry jelly mix

  • Sherry

  • Sliced fruit & Berries(Bananas, strawberries or raspberries)

  • Whipped cream

  • Custard

  • 2 x cups milk

  • 2 x egg yolks

  • 2 x tbsp. corn flour

  • 2 x tbsp. caster sugar and vanilla

  • OR you can you use Custard powder which Steve used to make his recipe

  • 1/2L milk

  • 2 x tbsp. custard powder

  • 3 x tbsp. sugar


  • 1.

    Place sliced jam roll around glass bowl

  • 2.

    Pour strawberry jelly mix over cake + dash sherry (not too sloppy)

  • 3.

    Slice fruit, and layer them over jam roll slice

  • 4.

    Pour custard over jam roll, fruit and jelly

  • 5.

    Cover with cling wrap immediately as not to form a thick skin

  • 6.

    To serve, cover with whipped cream and berries & always served chilled
