Turkey a La Noel with all the Traditional Trimmings

Try Myf's delicious Christmas main!

Ingredients

  • 1 x Boneless turkey breast, skin on

  • butter

  • salt and pepper

  • 4 x slices of bacon (finely chopped)

  • 6 x slices of white bread

  • 1 x Spanish onion

  • 2 x garlic cloves

  • 1 x cup chicken stock

  • 2 x tbsp. dried cranberries

  • 2 x sprigs rosemary finely chopped

  • 3 x tbsp. of chopped flat leave Parsley

  • string

  • All the Trimmings

  • Beans

  • 8 x potatoes

  • 10 x carrots

  • 1 x onion (quartered)

  • 4 x cloves of garlic

  • 2 x sprigs of rosemary

  • 5 x sprigs of thyme

  • Day Before Gravy

  • 2 x Celery sticks chopped roughly

  • 2 x carrots chopped roughly

  • 2 x onions peeled and quartered

  • 5 x fresh bay leaves

  • 5 x fresh sage leaves

  • 4 sprigs fresh rosemary

  • 2 rashers of streaky bacon

  • 8 x chicken wings

  • Olive Oil

  • Salt and Pepper

  • 4 x tbsp. plain flour

  • 60ml Port

  • Optional – 2 tsp. cranberry sauce

Method

  • Sauce:

  • 1.

    Mix Brandy, sauce, mayonnaise, cream, mustard, lemon and a dash of cayenne pepper in a bowl

  • 2.

    To Serve:

  • 3.

    Cut iceberg lettuce into small strips

  • 4.

    Chop mint

  • 5.

    Layer iceberg lettuce, mint and cress in serving cup

  • 6.

    Top with prawns and add a dollop of Thousand Island or Marie Rose Sauce

  • 7.

    Add more cress for decoration and another pinch of cayenne to finish

  • 8.

    Hang an unshelled prawn off the edge if you’re feeling classy!

  • All theTrimmings:

  • 1.

    Preheat oven to 200 degrees

  • 2.

    Put all veg and herbs into roasting tray and scatter the bacon on top

  • 3.

    Break chicken wings open, add to pan, drizzle with olive oil and sprinkle salt and pepper

  • 4.

    Toss together and roast for 1 hour

  • 5.

    Take pan out of oven and put on over hob over low heat

  • 6.

    Use potato masher to grind everything together(remove bones if it’s too difficult), scraping the goodness from the bottom of the pan

  • 7.

    Gradually add flour to thicken and add water as you go depending on what consistency you want

  • 8.

    Add Port

  • 9.

    Simmer for 25 mins

  • 10.

    Check seasoning then take roasting tray and push content through a sieve into a large bowl (keep liquid and discard the rest)

  • 11.

    Pop into a container and refrigerate

  • 12.

    On Christmas Day, when the breast is cooked and resting, use that roasting pan and any breast juices, add gravy and cook on hob until ready

  • Day Before Gravy (Cooking time 1 hour):

  • 1.
