Heat olive oil in a large frying pan over medium heat. Add onions and garlic and cook for a few minutes until softened
Add beef and cook, while breaking up with the soon, until browned.
Add chilli (optional), tomato pastes, herbs and spices, cacao and malt vinegar and cook for a further 1 minute, stirring to combine
Add tinned tomatoes and beef stock and season with salt and pepper, then bring to boil. Reduce heat and simmer for 45 minutes until sauce has reduced and thickened
Add red kidney beans and cook for further 15 minutes
Combine sour cream, shallots and coriander in a small bowl and season with salt and pepper
Combine diced avocado, coriander and fresh lime wedges in a bowl
Serve with steamed white rice of tortilla’s
