These delicious oysters are smoked with jasmine tea for 1-2 minutes.


  • 1 doz Oyster 1/2 shell

  • 50 g brown sugar

  • 50 g jasmine rice

  • 50 g jasmine tea


  • 1.

    Mix equal amounts of the brown sugar, rice and tea together and spoon into aluminium foil moulds to contain it well on all sides.

  • 2.

    Set up the steamer with the tea steaming mixture until well smoking.

  • 3.

    Place the half shell oysters in the steamer on a wire rack and steam until just starting to firm, about 1-2 minutes.

  • 4.

    Remove the oysters from the steamer, place aside to cool & and repeat the process.

  • 5.

    Change the steaming mixture as necessary.
