Mango Cheek Brulee
Cut mango on the flat side of the seed so you have two ""cheeks"".
Pre heat the hot plate on your BBQ.
At this time skewer the mango cheeks from end to end like a kebab, and firmly pack each cheek with the palm sugar ( this should be done just before cooking as the sugar dissolves and will run off the mangoes).
Place Mango cheeks flesh down on the griller. You will smell when the sugar starts to burn. Touch the skin. If it is warm, then the cheeks are cooked through.
To Serve, remove from grill and serve with ice cream or yoghurt.
