This stunning dish is createdwith crème fraiche, red wine, onion marmalade and pickled turnips.
Mix cooked potatoes with roughly chopped feta, dill and season with salt and pepper.
Using hands, form small ball shapes out of mixture and flatten (to 10cm diameter).
Using a non-stick surface, pan fry potato cake on both sides until golden brown.
Place cake on a plate and spread with crème fraiche, arranged rolled smoked salmon over the top.
Spoon onion marmalade over the smoked salmon then garnish cake and plate with turnips.
Red Onion Marmalade:
Slice onions and place in a saucepan with other ingredients, cook on low heat until all liquid has evaporated and you have the consistency of sticky marmalade.
