This beautiful breakfast is served with smoked salmon, salmon roe and za’atar.
Heat oil in a pan, add onions and peppers and cook over low heat until translucent, add garlic.
Cook for another 3-4 minutes, add diced tomato, cayenne pepper, salt and pepper and cook for a further 3-4 minutes
Whisk eggs, pour in an oiled hot pan, add chackchouka, mix with a fork and set.
When cooked, pour on a plate then scatter with salmon roe and sprinkle with za’atar.
