Try this delicious recipe, courtesy of our friends at Electrolux.
In the TURBOPRO mini chopper attachment, place the biscuits and the butter. Blend at low speed until you obtain an even, crumbly mixture. Line a buttered spring tin with this mix, making a 1 cm base.
Soak the gelatine leaves in cold water. With the Whisks at high speed, beat egg whites until stiff, adding a pinch of salt. Cut the passionfruit in half, scoop out the flesh and juice and strain both through a sieve.
Bring the cream and sugar to boil. Take off the heat and add in the drained gelatine leaves and the passionfruit juice.
In a salad bowl, use a spatula to gently blend the cream cheese with the egg whites. Fold delicately until the mixture is blended, then pour into the lined spring tin. Smooth the surface and leave to set in the refrigerator for 6 hours before turning out of the tin and serving.
TIP: Replace the passionfruit with the juice of 2 lemons, or 2 limes, or 1 orange for an alternative citrus flavour. Grate the rind of one fruit and add into the cake for a textured taste
