Prawn, Basil and Semi-dry Tomato Fettucini

Ingredients

  • 250gm packet Tri Coloured fettucini (or fave pasta)1 bunch torn Basil3/4 - 1kg Green Tiger Prawns deveined (tail on)300-400g Semi dried Tomatoes100g sliced Kalamata Olives3 medium Garlic cloves4 Spring Onions (or 1/2 bunch chives)1/2 cup freshly grated Parmesan1 cup Chicken Stock500ml Cream (may use light)pinch of saltpinch of pepper

Method

  • 1.

    Slightly cook Tiger prawns in a splash of Olive oil and remove from pan.Place tomatoes with oil, finely chopped garlic and shallots in frying pan and sauté for 10-15 minutes on low heat, slowly add one cup chicken stock and reduce to simmer until reduced to half the quantity of stock. Place the Prawns, Basil, Olives, Cream and grated Parmesan into the pan, toss and add seasoning to taste.

Notes

Don't overcook the prawns they cook also in the second phase.
